I think it is possible to do this, although changing the settings for the tabs in the display would probably require a restart (of mafia) to take effect.
Try taking a look at your _prefs.txt files in your 'settings' folder, to find out what the various properties are, and what format they need to be in.
IE: GLOBAL_prefs.txt and $YOURNAME_prefs.txt. Where $YOURNAME is equal to your characters name, obviously
